Chocolate Cake Recipe Ingredients:

2 cups all-purpose flour

1 tsp. baking soda

1 tsp. salt

2 cups sugar

½ tsp baking powder

¾ cup cooled brewed coffee

¾ cup evaporated milk

1 tbsp lemon juice

½ cup shortening

2 large eggs

2 tsp vanilla

4 ounces cooled melted semi-sweet chocolate

Method of Baking:

  • Preheat the oven to 350F. Grease and flour a 13 x 9 x 2 or two 9-inch pans.
  • Combine the lemon juice and evaporated milk in a bowl. Set aside.
  • Combine all the remaining ingredients except coffee and place in a bowl of the stand mixer. Set the mixer at a low speed. Slowly add the brewed coffee then the milk-lemon juice mixture into the mixer bowl. You should be able to make 3-4 additions into the bowl.
  • Beat the mixture for 30 seconds on low speed so that the ingredients will become moist.
  • Afterwards, beat the mixture for 3 minutes on high speed.
  • Pour the mixture evenly into baking pans.
  • Bake for 40-45 minutes (for oblong pans) or 30-35 minutes (for layer pans). The cake is done when you insert a wooden skewer in the middle and the skewer comes out clean.

 

Trick on making your chocolate cake from scratch: You can make your chocolate cake even more decadent when you incorporate around ¾ cup of chocolate chips into the mixture at the end of the mixing time and when you make a perfect frosting to go with the cake.
